HOW TO MAKE VEAL CUBES WITH CORIANDER RICE
Step 1: Season the veal cubes with salt and pepper. Let marinate for 20 minutes.
Step 2: Place the meat in a glass baking dish together with the unpeeled crushed garlic, bay leaf, margarine and the olive oil. Bring to preheated oven at 180°C (350ºF) about 40 minutes. Once in a while drizzle with their own sauce.
Step 3:
For the rice: Meanwhile, in a pan place the olive oil and the chopped garlic. Sauté over low heat until the onion starts to turn golden brown. Add the rice seasoned with a little salt, stir with a wooden spoon and fry in the olive oil about a minute. Pour the water, stir, simmer and cook about ten minutes. When the rice is almost cooked, add the coriander, wrap in the rice, cover the pan and turn off the heat.
Step 4: Serve the veal cubes drizzled with the sauce and with the coriander rice.
TIPS FOR COOKING RICE
1. We usually use long-grain rice or medium-grain rice but you can use another type of rice. Long-grain rice is looser while medium-grain rice is creamier and absorb much more the flavors.
Rice cooking time: about 10 to 12 minutes for long-grain rice and 13 to 15 minutes for medium-grain rice.
2. The amount of water for the rice depends on each person's taste. The mesure we usually use is 250 ml (about 1 cup) to 300 ml (1 1/3 cups) of water per 100 grams (1/2 cup) rice.
3. Always cook the rice with a lid and over low heat to prevent the rice from burning and sticking to the bottom of the pan.

- 500 grams (17 1/2 ounces) veal cut into cubes
- 7 cloves of garlic
- 150 ml (2/3 cup) olive oil
- 3 tablespoons margarine
- Pepper (to taste)
- 1 bay leaf
- Salt (to taste)
- 250 grams (1 1/4 cups) rice
- 50 ml (1/4 cup) olive oil
- 1 bunch of coriander
- 1 medium onion
- Salt (to taste)
- Water (about 650 ml (3 cups))
