STEP 1 In a small bowl, combine the Dijon mustard, olive oil, chopped thyme, grated garlic, nutmeg, salt and lemon juice.

STEP 2 Place the chicken breasts in a baking dish and pour over the lemon and mustard sauce. Let marinate for about 1 hour.

STEP 3 Bake at 180ºC (350ºF) until slightly golden brown, about 45 minutes.
