HOW TO MAKE COD DELIGHT
For the puree: Peel and wash the potatoes. Cook them in a saucepan with water seasoned with salt. When the potatoes are cooked, drain them and mash the potatoes with a potato masher or with a fork. Season with lemon juice, pepper, nutmeg, margarine and milk. Stir with a wooden spoon and place back on the stove over low heat. When starts bubbling, turn off the heat and set aside.
Cook the cod steaks in a saucepan with water. When the cod is cooked, drain it with a skimmer. Remove the skin and bones and flake it with a fork; set aside.
Place the olive oil, the onion finely sliced into round slices and the chopped garlic in a saucepan and saute over low heat until the onion start to turn golden brown. Add the flaked cod, season with a little pepper, stir and cook for about 4 to 5 minutes.
In a baking dish, place a layer of puree, on top, a layer of cod and finally, another layer of puree. Brush with beaten egg yolk and bake until golden brown, about 40 minutes.
Turn off the oven and serve.

- 3 desalted cod steaks (about 800 grams (1 3/4 pounds))
- 2 medium onions
- 2 cloves of garlic
- 50 ml (1/4 cup) olive oil
- 1.2 kg (2 2/3 pounds) potatoes
- 1 tablespoon margarine
- Pepper (to taste)
- 400 ml (1 3/4 cups) milk
- Juice of half a lemon
- Nutmeg (to taste)
- Salt (to taste)
