INGREDIENTS FOR HOMEMADE PUMPKIN JAM

- Pumpkin - Cooked pumpkin cut into pieces. Adds color and flavor.
- Cinnamon stick - Adds an extra flavor to the recipe.
- Lemon juice and lemon peel - Adds a very nice and fresh flavor.
- Light brown sugar - To sweeten and flavor.

HOW TO MAKE HOMEMADE PUMPKIN JAM
Step 1: In a large saucepan, add the pumpkin cut into pieces, light brown sugar, orange peel, cinnamon stick and the orange juice. Mix everything very well and bring to a boil over medium-high heat.
Step 2: When starts boiling, reduce to medium heat and cook the pumpkin for about 25 minutes.
Step 3: Turn off the heat and remove the orange peel and the cinnamon stick. Using a hand blender, blend the pumpkin pieces until smooth.
Step 4: Place the pan back on the stove over low heat for 20 minutes. Stir occasionally to prevent the jam from sticking to the bottom of the pan. (To check if the jam is ready, pour some of the jam onto a plate and run a spoon through the middle of the jam. If it leaves a trail like a road, the jam is ready.)
Step 5: When the jam starts to thicken, turn off the heat. Pour the jam into glass jars and allow to cool completely. Reserve the jam on the fridge.
Step 6: Serve this delicious pumpkin jam with crackers, toasts and fresh cheese.
RECIPE TIPS
1. To check if the jam is ready, pass a wooden spoon in the bottom of the saucepan and if it leaves a trail like a road you can turn off the heat.
2. How to store: Let the jam cool to room temperature and store it in the refrigerator in a glass jar tightly closed. If it is sealed tightly, you can store the jam for about 1 month. After this period, it may begin to lose quality and develop microorganisms.

I just made this with a couple of homegrown red kuri squash, which took a while to prep. But it was definitely worth it. It’s addictive! Even my husband likes it. I will be making this delight every autumn.
