HOW TO MAKE EASY VANILLA MUFFINS
Step 1: Preheat the oven to 180ºC (350ºF). Grease muffin tins with butter and dust with flour.
Step 2: Using a hand mixer or stand mixer fitted with whisk attachment, beat for about 2 minutes the sugar and the melted butter. Add the eggs, vanilla extract and mix for 1 to 2 minutes until obtain a creamy mixture. Add the flour and the baking powder and beat until a creamy and homogeneous mixture. Using a rubber spatula or sturdy whisk, give the batter a final turn to make sure there are no lumps at the bottom of the bowl.
Step 3: Pour small portions of the batter into the muffin tins and bake for about 10 to 12 minutes.
Step 4: Remove muffins from the oven and allow to cool for 15 minutes inside the tins.
Step 5: Remove from the tins and place the muffins onto a wire rack or a plate. Let too cool to room temperature.
Step 6: Garnish the muffins with powdered sugar and serve.
