This perfect blend of flavors, chicken with fruit, is the ideal meal to serve in a Summer afternoon among friends.

Ingredients

  • 1.5 kg / (3 1/3 pounds) chicken cut into pieces
  • 2 tablespoons brown sugar
  • 3 pineapple slices
  • 1 orange
  • 2 kiwis
  • 1 lemon
  • 150 ml / (1/2 cup and 2 tablespoons) olive oil
  • Pepper (to taste)
  • Thyme (to taste)
  • 4 cloves of garlic
  • 2 tablespoons honey
  • Parsley (to taste)
  • Salt (to taste)

    Directions

    Step 1


    1. Season the chicken pieces with salt, chopped garlics, honey, brown sugar, pepper and thyme. Let marinate about 30 minutes.

    Step 2


    1. Preheat the oven to 180ºC / (350ºF).

    Step 3


    1. Place the chicken pieces with the marinade in a baking pan and drizzle with olive oil. Bake about 50 minutes. Occasionally drizzle the chicken with the sauce.

    Step 4


    1. Cut the orange and the lemon into round slices and the pineapple and the kiwi into pieces. Remove briefly the baking pan from the oven and add the fruit. Place the baking pan back on the oven about 10 minutes.

    Step 5


    1. Turn off the oven, sprinkle with chopped parsley and serve the chicken with chips or white rice.
