Ingredients

  • For the meat:
  • 600 grams / (1 1/3 pounds) pork cut into cubes
  • 50 ml / (3 1/3 tablespoons) olive oil
  • 2 medium onions
  • Pepper (to taste)
  • 10 cloves of garlic
  • 1 bay leaf
  • 1 tablespoon red pepper sauce
  • 100 ml / (6 3/4 tablespoons) white wine
  • Salt (to taste)
  • Coriander (to taste)
  • For the Portuguese migas:
  • 600 grams / (1 1/3 pounds) stale bread
  • 100 ml / (6 3/4 tablespoons) olive oil
  • 4 cloves of garlic
  • 900 ml / (3 3/4 cups) water
  • 1 bunch of coriander
  • Pepper (to taste)
  • Salt (to taste)

    Directions

    Step 1


    1. For the meat:
    2. Season the pork cubes with salt, five chopped garlics, five unpeeled crushed garlics (place the garlic on a table and use your hand to press the flat side of the knife against the garlic. The garlic will easily crush under your weight), pepper, red pepper sauce, bay leaf and white wine. Let marinate about one hour.

    Step 2


    1. Place the olive oil and the onions cut into round slices in a saucepan and saute over low heat until the onion starts to turn slightly golden. Then, add the pork together with the marinade. Stir with a wooden spoon, cover the pan and simmer over low heat about 40 to 45 minutes, stirring occasionally. Turn off the heat, sprinkle with chopped coriander and set aside.

    1. For the Portuguese migas:
    2. Meanwhile, boil the water in a saucepan.

    Step 4


    1. Place the olive oil and the peeled whole garlics in another saucepan. Stir and cook over low heat about 3 minutes, stirring occasionally. Then, add the bread cut into pieces and mix with a spoon in the olive oil. Pour the boiling water gradually and season with a little salt and pepper. Mix everything well and cook over low heat until the bread start to break down and the water absorbed, stirring occasionally (note: the mixture should not stay neither too liquid nor too solid).

    Step 5


    1. Sprinkle with chopped coriander, mix in the bread and serve the Portuguese migas with the pork. Bon appetit!!!
