Ingredients

  • 3 medium ripe tomatoes
  • 1 medium onion
  • Pepper (to taste)
  • 4 eggs
  • 1 bay leaf
  • Oregano (to taste)
  • 50 ml (1/4 cup) olive oil
  • Salt (to taste)

    Directions

    Step 1


    1. Place the olive oil, the onion cut into round slices, bay leaf, the oregano and the peeled tomatoes cut into small pieces in a saucepan and cook over low heat until the tomato start to break down, stirring occasionally.
