HOW TO CINNAMON AND HONEY SQUARES
Beat the eggs, brown sugar and the lemon zests until a creamy and homogeneous mixture. Add the cinnamon, honey and mix for 2 to 3 minutes until it's nicely incorporated. Add the flour mixed with the baking powder and beat until obtain a homogeneous mixture. Pour the mixture into the baking for about 30 minutes. Remove the cake from oven and let cool completely. Remove the parchment paper and cut the cake into squares. Garnish with lemon zests and serve.

- 3 large eggs
- 150 grams (about 1 cup) dark brown sugar
- 2 tablespoons honey
- Zests of one lemon
- 200 grams (1 1/2 cups) all-purpose flour
- 1 tablespoon cinnamon powder
- 1 teaspoon baking powder
- Lemon zests for garnish
- Preheat the oven to 180ºC (350ºF). Grease a rectangular baking dish (24 x 18 centimeters (9 1/2 x 7 inches)) with margarine and line with parchment paper.
- In an electric mixer, beat on medium speed the eggs, brown sugar and the lemon zests until a creamy and homogeneous mixture. Add the cinnamon, honey and mix for 2 to 3 minutes until it's nicely incorporated. Reduce the mixer speed to low, add the flour mixed with the baking powder and beat until obtain a homogeneous mixture.
- Pour the mixture into the baking dish and bake until a toothpick inserted in the center comes out clean, about 30 minutes (the time depends on the oven).
- Remove the cake from oven and let cool completely. Remove the parchment paper and cut the cake into squares. Garnish with lemon zests and serve.
