INGREDIENTS FOR PORTUGUESE FLAN

HOW TO MAKE PORTUGUESE FLAN
Step 1: Preheat the oven to 180ºC (350ºF).
Step 2: Pour 200 grams (about 1 cup) sugar in a pudding mold. Place the pudding mold on the stove over low heat until caramelize the sugar (go turning the pudding mold until stays completely caramelized).
Step 3: Using an electric mixer, beat on medium speed the eggs, sugar and the lemon zest until obtain a homogeneous mixture. Pour the milk and mix about 2 to 3 minutes until it's nicely incorporated.
Step 4: Pour the mixture into the pudding mold and bake for about 30 minutes.
Step 5: Remove the flan from the oven and allow to cool completely inside the pudding mold.
Step 6: Place a serving plate over the pudding and flip.
RECIPE TIPS
1. Let the flan pudding cool completely in the pan before taking it out of the oven.
2. Run a knife around the inner edge of the pudding mold.
3. Flip the pudding mold onto a plate and wait a few minutes before removing the mold. If you notice that the pudding is still sticking to the mold, gently tap the mold with the palm of your hand.
HOW TO STORE IN THE REFRIGERATOR:
Cut the Portuguese flan into slices and store it in an airtight container. Never store for more than 3 days. After this period of time, the pudding may begin to lose flavor and quality.

- 5 large eggs
- 500 ml (about 2 cups) milk
- Zest of one lemon
- 100 grams (1/2 cup) granulated sugar
- 200 grams (about 1 cup) granulated sugar to caramelize
- Preheat the oven to 180ºC (350ºF).
- Pour 200 grams (about 1 cup) sugar in a pudding mold (18 x 10 centimeters (7 x 4 inches)). Place the pudding mold on the stove over low heat until caramelize the sugar (go turning the pudding mold until stays completely caramelized).
- Using an electric mixer, beat on medium speed the eggs, sugar and the lemon zest until obtain a homogeneous mixture. Pour the milk and mix about 2 to 3 minutes until it's nicely incorporated.
- Pour the mixture into the pudding mold and bake for about 30 minutes until golden (the time depends on the oven).
- Remove the flan from the oven and allow to cool completely inside the pudding mold.
- Place a serving plate over the pudding and flip.
