HOW TO MAKE ROASTED TURKEY LEG WITH MUSTARD
Step 1: Place the turkey leg on a baking dish and brush with Dijon mustard. Season with salt, pepper, nutmeg, paprika, chopped garlic and thyme. Let marinate for about two hours.
Step 2: Preheat the oven to 180ºC (350ºF).
Step 3: Add the sliced onion to the baking dish and drizzle the turkey leg with olive oil and lemon juice.
Step 4: Roast until golden brown, about 1 hour and 50 minutes (if it starts to golden too much, cover the leg with aluminum foil). Occasionally, baste the turkey leg with the sauce.
Step 5: Turn off the oven and serve with mashed potatoes, carrot rice, oven roasted potatoes or green peas rice.
TIPS FOR ROASTED TURKEY LEG WITH MUSTARD
1. If the turkey leg starts to brown too much reduce the oven temperature or cover with aluminum foil.
2. We usually roast the turkey at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to roast, it has the advantage of enhancing much more the flavors and the meat gets more tender.
3. If you have leftovers, store the turkey in the fridge in a properly airtight container (to prevent the growth of microorganisms). To avoid drying out the meat, do not reheat the food in the oven, reheat it in the microwave.

- 1 kg (2 1/4 pounds) turkey leg
- 2 tablespoons Dijon mustard
- 150 ml (2/3 cup) olive oil
- Juice of one lemon
- 4 cloves of garlic
- 1 large onion
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1 teaspoon nutmeg
- Thyme (to taste)
- 1 teaspoon salt
